I love getting new ideas for smoothies, salads and other dishes - so please share what you are (un)cooking today! Especially the quick and easy variety.
Here are a couple of my favorites:
Apple - Carrot Breakfast or snack.
This is a quick and easy food processor recipe. Use the metal "S" blade in the bottom of the food processor.
1 apple, cored
1 large carrot, trimmed, washed
1 handful pecans
1 tbs ground chia seeds
3 tbs hemp nuts
1/4 cup dried currants
Place the first 3 ingredients into the food processor and process until well chopped. Pour this into a serving bowl and stir in the last 3 ingredients.
Quick and delicious.
Options:
Sometimes I make it green by adding a large handful of organic baby spinach to the food processor.
I also may juice a lemon and pour over the entire mixture.
A small slice of ginger added to the basic recipe is also good.
Other fresh fruits can be stired in in lieu of the currants, such as strawberries, blueberries of a chopped peach.
Bitter Greens
1 large bunch collards or kale
1 or 2 large fresh onions
1 lemon
olive oil
seasoning to taste
Remove the stem and vein from the leaves, stack them and slice very thin. Slice the onions very thin and mix together. Add olive oil and the juice of 1 lemon and mix thoroughly. I like to season this with cajun seasoning or old bay. Option: sometimes I add a finely chopped carrot. Allow the mixture to marinate several hours - I usually make it up a day ahead for best flavor.
