Fermentation Class Ideas

I wanted to see if anyone was interested in doing a fermentation class. I was looking around online and was thinking two different things. This weekend at the meetup we discussed having a fermentation class run by a few of us local folks! But I was also looking at "Wild Fermentation" http://www.wildfermentation.com/index.php and they do classes. I was thinking we could perhaps coordinate with the new Whole Foods in Annapolis and do one at the learning center there depending on the cost. Plus Sandor Ellix Katz has been teaching fermenting for 10+ years and has written a few books. I thought it would be fun to have him or one of his instructors do a class for our area (Ashville is the farthest North he has come that I have seen). But he has on his site that he is interested in doing classes and would like people with interest to contact him. Another thing I thought would be really neat is if he spoke too because he has AIDS and has had it for many years. Using Fermenting as a large part of his healing.
